Saito is a field blend. There are three different vineyards for this wine with many varieties inside. Some we don’t know and they are unknown. We gave them to the lab to make a DNA-analysis and it said no match with known varieties. It is not an orange wine.

Grape treatment: crushed and on the skins with stems for two days, pressed in basket press

Matured in: oak barrel, amphora, concrete egg
Sulphur added: + 10 ppm on the day of bottling
Filtration: of course not

The wine contains lees. Decant the wine or shake bottle before opening (recommended). Serving temperature: 7-9°C
